This simple arugula and beet salad will become a lunch or dinner-time staple. It's perfect anytime of year to serve alongside your favorite protein for the ultimate side salad. This delicious arugula beet salad is tossed with chopped beets, chopped apples, goat cheese and our Red Beet Dressing that you can use for any salad that calls for roasted or pickled beets. 

Modifications:

  • Vegan: Sub a vegan-dairy-free "goat style" cheese for dairy goat cheese.

Equipment Needed:

Arugula and Beet Salad With Goat Cheese and Apples Recipe

Ingredients

  • 7 ounces Arugula (We used Trader Joe’s Organics Arugula)

  • 4 ounces Goat Cheese (We used Silver Goat brand)

  • 1 Large Apple - Diced ½ inch pieces (We used an Organic Pink Lady Apple)

  • 1 Cup Cooked Red Beets - Diced ½ inch pieces (We used Gefen Organic Red Beets - Whole, Peeled, Cooked & Ready to Eat)

  • 1 Batch of our Best Red Beet Salad Dressing

Directions

  1. Make a batch of our Beet Salad Dressing FIRST

  2. Add the arugula to the mixing bowl. Wash the arugula if not pre-washed.

  3. Add the chopped apple to the mixing bowl. I used the knife to chop these up, but I’ve also used the Alligator to chop these into perfect pieces.

  4. Slice the beets into ½ inch slices, then use the Alligator Chopper to dice them into perfect pieces. Image is a 17.6oz bag of Gefen whole, peeled, cooked & ready-to-eat beets chopped. Use only 1 Cup for salad.

  5. Add 1 Cup of the chopped beets to the mixing bowl.

  6. Add the Red Beet Dressing batch to the mixing bowl and gently toss to evenly coat the arugula and other ingredients.

  7. Add the goat cheese to the mixing bowl and gently toss. The goat cheese will somewhat dissolve into the salad. If you prefer, add the goat cheese to each serving after plated.

  8. Plate the salad mix and enjoy! Pairs great with Red Wine.

  9. Optional: Sprinkle with chopped walnuts and/or dried cranberries.
